A new mode, ''Barrells'', would be better.

There'd be like, points on the track or areas which would give you 1 chance of dropping a barrel behind you only if you're on the places from 1 to 5.

The barrels might not be such a bad idea. It should be set though that after a certain checkpoint you can drop them cause dropping them at the very start would cause chaos, to say the least. And there should be a limit of how many you can drop.
