will you use the PC for highly multi-threaded workloads, that can use all 8 cores easily? i don't know what are you working with, so I can't really say that i7 is useless for you, but for most people it is.
if you don't need to OC, you can get pretty much any cheap motherboard that fits (i.e. right socket and H87), and not worry about it, you probably don't need the additional features. the smaller ones are fine, just check that the feature list has everything you might want.
Nvidia is considered somewhat more premium and had less driver issues, but lately it doesn't really matter, as AMD did a good job fixing theirs, so its mostly just who holds the performance crown, and that is irrevelant for us. AMD's price-performance is usually better indeed.
did you really want to go with such a low end gpu? with an otherwise high-end pc, i'd take way more powerful GPU, but I guess you might not need it.
instead of one 8GB ram stick, get two 4GB ones, as then you can put them in dual channel mode, and they will be faster.
also, cpu coolers are really unnecessary if you do not overclock, unless you find the stock one to be too loud, and even then, the 60euro one is way overboard..
