I think it's going to be a Stallion, the GTAIV Stallion wasn't very special to me it was just included for the sake of GTA's history. The GTAIV Stallion didn't even look that close to the III era Stallion anyway.

I think we might see car customisation too: look at wheels, vents and spoiler on the Comet.

why not sabre?

Because Sabre (or at least Sabre GT) in GTAIV was too awesome to omit from GTAV.  8)
